Express breakfast

Being a working mum, time is very crucial especially when it comes to preparing breakfast for my children so I'll share with you this simple recipe
Fried egg bread
What you'll need ;
1. about 3 piece of bread
2. 2 large eggs ( I always use double A eggs )
3. A pinch of salt
4. 1 piece sausage ( Optional )
5. 2 tablespoon of cooking oil

Next....
a. In a large bowl mixed the egg with salt.
b. cut the bread into small pieces , if you like to add some sausages slice the sausages into small pieces.
c. Put the bread into the egg, mixed well until fully absorbed.

Heat a non-stick pan and pour the oil. Fry the egg mix until slightly brownish than turn the other side. You can serve it with sauce or your favorite jam.

Crunchy Chocolate Chip Cookies


you'll need;
1. 200 - 220 grams flour
2. 1/2 teaspoon baking powder
3. 1/2 teaspoon salt
4. 8 tablespoon unsalted butter, room temperature
5. 1/2 cup brown sugar
6. 1/2 cup granulated sugar
7. 1 1/2 teaspoon vanilla extract
8. 1 large egg
and finally 1 1/3 cup semi chocolate chips. ( I always put more.... )

Next steps......
a. Preheat oven to 350 degrees F ( about 175 C)
b. Line up a couple of cookie sheet with parchment.
c. Sift or thoroughly whisk together flour, baking powder, baking soda, and salt. set aside.
d. Cream butter and both sugars with and electric mixer. Add egg and vanilla beat until it mixed in.
e. Add flour mixture and stir until incorporated than stir in the chocolate chips.

Drop rounded teaspoonfuls on the parchment lined cookie sheets and bake for 12 - 15 minutes or until edges start to brown. The baking powder prevents the cookies from browning quickly, so it seems the cookies can bake longer time and becoming crunchier without burning or getting overly brown.
